This was circa 2002. So, I would have been around 23 or so. And this was at a restaurant in Chicago that I worked at called Fortunato (closed now). I have a ridiculous amount of fond memories from working there. We were all hired before the restaurant even opened and all clicked right away. There was only a dinner shift, so we all came in at the same time and left at the same time. And we hung out after work most nights as well. Excellent people, talented chefs, fantastic food, great experience. Plus, this is the place where I learned to hold my own on the line. Good stuff.
